招潮蟹的肉雖然營養豐富，味道鮮美，但是如果食用不得當，就會中毒，拉肚子。其實不是蟹肉本身有毒，而是由於螃蟹進食不干淨，以至不少有毒物質進入它的胃裡。因此，切不可誤食其胃、腸、鰓等部分。螃蟹身上常寄生著一些危害人體的水生生物，如果生吃螃蟹，就難免感染上寄生蟲病。故務必將螃蟹燒得熟透再吃。選購螃蟹要注意是否新鮮，尤其是河蟹，必須吃活品。因螃蟹死後很快就會腐敗，產生的組氨酸最易使人中毒。
下列人群不宜食用：
1、患有傷風、發熱、胃痛以及腹瀉的病人吃蟹會使病情加劇。
2、慢性胃炎、十二指潰瘍、膽囊炎、膽結石症、肝炎活動期的人，最好不吃蟹螃蟹。
3、蟹黃中膽固醇含量高，患有冠心病、高血壓、動脈硬化、高血脂的人應少吃或不吃蟹黃。
4、體質過敏的人，吃蟹後容易引起噁心、嘔吐，起風疹塊。
5、脾胃虛寒的人。
